
Do you happen to have any financiers? I've been looking and looking, but I can't seem to find any anywhere. I know this isn't France, but we can still enjoy them here, right? Well I suppose I will just have to make them myself...
If you’ve never tried a financier before, you should. They’re buttery with a somewhat coarse texture, but still very soft. And they just melt in your mouth. There is a definite lack of these treats, at least out here, which I find quite depressing, and believe should be remedied immediately! I don’t know if I can fix this problem for everyone, everywhere, but this is a start.

Raspberry Financiers
Recipe adapted from Simply Sensational Desserts
Ingredients:
• ½ cup almond meal
• ¼ cup confectioners’ sugar
• ¼ cup flour (cake if you have it, all-purpose if you don’t)
• ¼ cup granulated sugar
• 3 large egg whites
• ½ teaspoons almond extract
• 4 tablespoons unsalted butter, melted and still hot
• Fresh raspberries
1. Preheat the oven to 350ºF. Grease a mini-muffin pan.
2. Place the almond meal in the bowl of an electric mixer and sift the confectioners’ sugar and flour on top of it. Add the granulated sugar and, using the whisk attachment, mix on low speed to combine.
3. Add the egg whites one at time, beating well after each addition.
4. Add the almond extract and beat well.
5. Turn the mixer on and stream in the hot butter. Mix until blended, about 30 seconds.
6. Transfer the batter to a glass measuring cup with a spout.
7. Pour the batter into the cups, filling them about ¾ full. Place one raspberry in each cup.
8. Bake for 15 to 20 minutes, or until golden and a toothpick inserted in the center comes out clean.
Just a couple of side notes: First, if you don’t have almond meal but you do have almonds, just grind a little more than a ½ cup of those in a food processor. Second, financiers are traditionally shaped like rectangles; so if you have the molds, go for it. Otherwise, just about anything will work. (I did mini-muffins and a mini bundt cake.) Make sure you check them because it will change the baking time. Last, any small fruit would be delicious in these. They’d be good plain too.

I love financiers, here in Australia, they are more commonly known as frinds, and we can actually get them pretty much at every cafe. Although I think the best ones are the kind you make yourself.

I did notice that the recipe called for more yeast than I'm used to using, which probably helped alot. Maybe I should up the yeast in some of my other recipes that I like, but that don't quite rise as high?

Sure, I'm glad to inspire and help. Adding more yeast would help your breads rise more, but you also don't want to rush it. A lot of the flavor from bread comes from long fermentations. So maybe add a little more yeast and give the dough lots of rising time. I bet that would be perfect!
